Baião de dois:
typical dish from the state of Ceará, in nord-east of Brazil.
Ingredients :
- 200 grams of dry flesh
- 100 grams of spareribs
- 100 grams of sausages (sausages from Calabria)
- 500 grams of eye beans
- 3 slices of garlic
- 1 bunch of little onions
- 250 grams of rice
- 1 big onion
- 2 spoons of vinegar
- coriander
- salt
- pepper
- paprika
Instructions
Cut the meat in dice and cook them with water and 2 teaspoons of vinegar.
Boil the dry flesh for 20 minutes to weaken its flavour.
Drain the meat and put it away.
Boil the (washed) beans for half an hour in a pression cooker.
Drain the beans and put them away.
Flatten 3 slices of garlic, put them in a pan, add a pinch of salt and pepper, oil, onion, and some paprika.
Add the meat, beans and rice.
Stew and add a half of the little onions (the remainng half of little onions will be used at the end to decorate), the coriander and some salt.
Add hot water to cover all the ingredients.
