Galinha com quiabo:
the chicke with quiabo, a typical tropical fruit coming from Africa, is a traditional dish mineira cuisine.
Ingredients :
- 3 kg thighs and above-thigh of chicken
- 6 minced cloves garlic
- salt
- pimenta malagueta (hot chili pepper)
- 600 grams of quiabo
- 2 minced big onions
- 3 tablespoon of lemon juice
- 1 tablespoon of concentrated tomato
Instructions
Put the pieces of chicken in a bowl, season with garlic, onion, salt, and enough chili pepper, leave to rest for 2 hours.
Put the oil in a pot and warm up at high fire.
Add the chicken and frie, turning it sometimes, until it is gilded.
Remove the chicken from the pot and leave it away.
Wash and dry the quiabo, cut the tips and cut in rings.
Put the onion in the pot and brown and add the quiabo, pour with the lemon juice or the vinegar, add the concentrated tomato juice and cook, always lightely blending for 10 minutes about or until the quiabo is dry.
Put the chicken in the pot and pour the hot water, if needed add some salt and keep cooking for some minutes.
If you prefer add the condimento of the brown chicken.
Pair with the angu (a kind of cornmeal mush) and white rice...
